It’s summertime and what better way to beat the heat than with homemade popsicles?
Some store-bought popsicles are loaded with artificial coloring, high fructose corn syrup and
other ingredients I can't pronounce.
Here's a healthier and easy alternative:
Produce Pops
- 1 cup of orange juice or coconut water
- 1 cup of spinach or kale or ½ cup of each
- 1 cup of blueberries
- ½ cup of strawberries
- 1 banana
- Pinch of ground flax seeds (optional)
- ¼ of a raw red beet (optional)
- Blend all together and then taste. If not sweet enough add a small amount of local honey, agave nectar, or a half to one packet of stevia.
- Pour your liquid into popsicle molds and freeze for two hours. If you have liquid leftover you can freeze in jars for smoothies at a later time.

Tips:
- Measurements will vary depending on the size of your popsicle molds. We were using small molds.
- If you don’t have a high power blender use baby spinach and cut up into smaller pieces before blending.
- The blueberries and raw beet will mask the green color of the spinach. The beet is optional. Most stores sell beets individually as well as in a bunch…or pick up a few slivers off the salad bar at your grocery store. Ground flaxseeds have an abundance of omega-3 fatty acids. Flaxseeds are also optional and if your children aren't used to flax start with just a pinch.
- Because so many plastics have nasty ingredients that can leach, I make sure to use BPA free popsicle molds. You can purchase BPA free molds at Amazon.com, Pottery Barn Kids (on sale right now - see below) and other retailers.
